Chagigah Kitchen: Date Loaf

Hello, Chagigah listeners! This week’s recipe is short and straight to the point—kind of how we’d like everything, but we’re happy to take what we can get. Date loaf is a delicious snack or appetizer that takes under an hour to get just right, and we hope that you’ll enjoy it with your family without the stress that comes with the more complicated dishes in the Chagigah repertoire. Date Loaf

Ingredients:
- ½ tsp. baking soda
- ½ lb. pitted dates, finely chopped
- 1 cup boiling water
- ½ cup plus one tbsp. oil
- 1 cup white sugar
- 1 ½ cups flour
- 2 tsp. baking powder
- ½ tsp. salt
- ½ cup chopped walnuts
- 2 eggs, lightly beaten
- Grated rind of 1 orange
- ½ tsp. vanilla

Directions:
Preheat oven to 350 degrees F. Grease a 9” x 5”x 3” loaf pan. Sprinkle baking soda over dates in a large bowl. Add boiling water and oil. Set aside until dates have softened a bit. In another bowl, sift sugar, flour, baking powder and salt together. Stir date mixture into dry ingredients. Add nuts. Fold in eggs, orange rind and vanilla to the mixture. Mix all ingredients until well blended. Pour batter into prepared loaf pan and bake for 50-60 minutes. When toothpick inserted in centre of date nut loaf comes out clean, remove from oven.
